Seasoned ground chuck is rolled around sliced ham and sliced mozzarella for a
fancy meatloaf. Serve with green beans and sweet corn.

Manhattan Chicken a la King
This zippy chicken entrée is fast and fabulous. It’s a real crowd pleaser with
mushrooms, onions, celery, and tomatoes. Serve over cooked noodles and a side
salad.

Breakfast Eggs with Potato Crust
This is essentially a quiche with a hash brown crust, filled with diced ham, eggs, and
cheese. It was offered in March and got rave reviews. It is perfect for a busy weekend
morning, brunch or a “breakfast dinner”. Serve with toast and fresh fruit.

Chicken Diane
Thin chicken breast browned in oil and served with a sauce of lemon, parsley, Dijon,
chicken broth and green onions. Serve with a green salad and dinner roll.

Cider-Braised Pork Loin Chops
This sweet and savory pork dish gives the impression that you’ve spent a lot of time in
the kitchen. Pork tenderloin, tomatoes, apples, potatoes, onion, apple juice, cider,
brown sugar and spices marinate together to make a complete meal.

Three Bean Turkey Chili
This chili has a great flavor with a combination of garbanzo, kidney, and black
beans. Warm up a cool evening with a bowl of this chili and saltine crackers.

Chicken Shells
Pasta shells filled with a creamy chicken mixture of soups, sour cream, onion and
mushrooms, topped with cheddar cheese. This entrée was a family favorite of mine,
but has proven to be your all time number one favorite also. Add a side of green
beans and a dinner roll.

Round Steak with Herbs        No Split
Ladle the wonderfully rich gravy over the tender herbed round steak and noodles
for a home-style main dish your family will love. Serve with steamed broccoli.

Spicy Honey Shrimp
A little spicy, a little sweet. This dish is stir fried on the stove and served over rice.
Crushed red pepper gives it its bite, honey and lots of spices give it some sweet. Very
tasty and a repeat favorite. Serve with roasted carrots.

Cranberry Salsa Chicken with Couscous
Something a little different! This entrée is a delightful addition to our menu.
Chicken breast cooked covered with a mix of salsa, cranberries, honey, cloves,
cinnamon, and cumin. Great flavor, everyone will like and no one will guess they are
eating healthy. Serve over couscous with your favorite green vegetable.

Sombrero Pie
Fast and good! Crunchy corn chips scattered around the edge of the beef mixture in
the skillet form the “brim” of this sombrero pie. Very family friendly and a meal in
itself.

Pumpkin Bread Pudding
This dessert is better than pumpkin pie. Cubed croissants, brown sugar, pumpkin,
cinnamon, ginger, vanilla, and dates mixed and baked. Serve it warm with whipped
cream and sprinkled cinnamon. Yummy
