December's Menu
A traditional stew with a touch of Italian. Slow cooked all day and ready to warm
that cold evening. Serve with cheddar cheese biscuits or cornbread.

Chicken Cordon bleu
Chicken breast rolled up with ham and Swiss cheese, and then dredged in bread
crumbs. Serve with roasted tomatoes and asparagus.

Maple Glazed Salmon with Pineapple Salsa
Salmon filets marinated in a maple syrup, teriyaki, pineapple juice, ginger and garlic
mix. It is accompanied with a pineapple salsa. A little spicy, a little sweet and totally
delicious. Serve with your favorite veggie or a mixed salad.

Country Style Pork Ribs
These ribs have been a favorite both times we have offered them. They are slow
cooked in a rich tomato sauce. Serve on a mound of hot noodles, add some slaw and
your ready for a treat.

Meat Balls with Gravy
Turkey meatballs slow cooked with mushroom soup and gravy mix. These are great
served over mashed potatoes.

Tortilla Soup
This is a great soup for those cold evenings at home. It consists of green chilies,
tomatoes, onion, garlic, chicken, broth, spices, and corn tortillas. Serve it with
chopped avocados and cheddar cheese. It is really great.

Pork Tenders
The aroma of these baking will get your family to the table with no fuss. Pork loin is
brushed and coated with seasoned bread crumbs. Serve with honey mustard sauce
and green beans.

Smothered Enchiladas
Taco seasoned beef and green chilies, rolled in flour tortillas, covered with a sour
cream-chicken soup sauce, and topped with cheddar cheese. Serve with salsa, dollop
of sour cream, green onion, and chips. You’ve got a meal.

Sautéed Turkey Cutlets with Orange-Cranberry Pan Sauce
Here is another nice flavor on our turkey cutlets. The sauce is orange juice, Dijon
and cranberries. I didn’t think I would like these until I put it in my mouth. Serve with
wild rice.

Old World Chicken and Vegetables
With a mix of herbs and spices, chicken is layered with onions and green peppers and
cooked until tender. It is served over egg noodles. Leftovers make great filled
tortillas.

Christmas Morning Casserole
For that special morning or at brunch. This casserole is made with turkey sausage,
bread cubes, eggs, and cheddar cheese. It is the one everyone likes. Serve it with
sliced fruit and grapes.

Frozen Pumpkin Cream Pie         No Split
If you enjoyed our frozen peach pie from the June menu and you like pumpkin, you will
enjoy this too. We think it is better than the traditional pumpkin pie. You be the judge.
